In the early 1900s, Mario's great-great-grandfather migrated to the Datanli region and started working at El Palacio estate. He purchased 7 hectares of land there and named it Saragoza, after his childhood neighborhood. In 1994, after the land was inherited, Mario's father began cultivating coffee on the property. The farm grew in size significantly but upon facing financial difficulties due to fluctuations in the coffee market, some of it was sold. Now, their focus has shifted towards smaller parcels of land in order to improve the quality of their coffee varieties, specifically Red Catuai and Chirizo. By experimenting with different processing methods, such as honey and natural processing, they aim to improve the taste of their coffee.
