In 2008, musician and activist Ernesto Lopez, also known as Matute, embarked on a journey to live in the mountains of Bosawas, a UNESCO biosphere preserve in Jinotega. In quest of sustainability, he co-founded Los Nogales with Arturo Cruz and Margaux. Today, after 15 years, the project focuses on environmental and artistic education, organic coffee cultivation, permaculture, health tourism and restoring degraded forests. Inspired by their neighbors' coffee stories, Los Nogales took a unique approach to coffee farming—growing organically while restoring the soil. Their enthusiasm for coffee led them to experiment with honey and natural processing methods, improving taste and quality; a technique that was unheard of before. Now, a cup of Los Nogales coffee represents not just a beverage, but also 15 years of forest regeneration.
